White underwear is not a taste, it is a manufacturing decision that outlived its reasons. Bleach, boil washes, dye cost, and why whites turn grey.

Pull a cotton boll apart and the fibre inside is not white. It is a soft, slightly greasy cream, closer to old paper than to a bedsheet, carrying waxes, pectins, traces of the seed and whatever the field put on it. Left alone, a shirt woven from it would be the colour of weak tea. Every white cotton garment you own was made white by an industrial process performed on purpose, at cost, by somebody who had a reason.
That is the part people skip. White reads as the absence of a decision. In textiles it is the opposite: the most processed state cotton can be in.
So the question is not why men's underwear went white. It is why the industry paid for white, for so long, when the cheap answer was sitting in the bale.
For most of the history of linen and cotton, bleaching was not a chemical you added. It was a field you owned.
The process was called crofting, and the fields were bleachfields, a word that survives in street names across Scotland, Ulster and the north of England. Cloth was steeped in water, boiled in lye made from wood ash, soaped, soaked in buttermilk or later in dilute sulphuric acid, then laid flat on grass in the sun for days at a stretch, the cycle repeated until it gave up its colour. Contemporary accounts describe the sequence as taking weeks, and the land it used was land doing nothing else.
Two things ended that. In 1785 the French chemist Claude Louis Berthollet demonstrated the bleaching properties of chlorine, eleven years after Carl Wilhelm Scheele first isolated the gas. Chlorine worked in hours rather than weeks and was a nightmare to handle. Then in 1799 the Scottish chemist Charles Tennant patented bleaching powder, made by absorbing chlorine gas into damp slaked lime, which turned it into a dry solid you could put in a barrel and send anywhere. It remained the standard until the 1920s, when liquefied chlorine and sodium hypochlorite took over.
That is the moment white stops being a luxury and starts being infrastructure. Bleaching had been the bottleneck; once it was solved, plain white cotton became one of the cheapest fabrics on earth. Underwear was invented, in its modern sense, into exactly that market. Only in its modern sense, though, since the Egyptians had been associating clean white linen with status for thousands of years before any chemist got involved Before the Brief: Loincloths, Fundoshi and Four Thousand Years.
The argument that did the real work is a hygiene argument rather than an aesthetic one.
Before enzyme detergents, the domestic method for getting undergarments clean was heat. You boiled them. The copper in the scullery, and later the boil setting on the machine, existed because sustained high temperature was the only reliable weapon a household had against bacteria and body oils.
Boiling destroys dye. Not all dye and not immediately, but reliably enough that any coloured garment put through a weekly boil wash would fade, bleed onto the rest of the load, and end up a shade nobody chose. White has nothing to lose. Boil it, bleach it, boil it again, and it comes back to where it started.
The second half of the argument matters more. White is the only colour on which dirt cannot hide. A stain on a navy garment is invisible until you hold it to the light; a stain on a white one announces itself from across the room. In an era before anyone could measure whether a wash had worked, visible whiteness was the only proof that it had. Which is why hospitals and hotels standardised on white linen and largely still do: a fabric that shows every failure is one you cannot quietly fail on.

The commercial case is duller and just as decisive.
Bleaching happens to the whole run. Dyeing does not. Colour is a separate wet process with its own vessels, chemistry, water, heat and effluent, and it splits your production into batches. A mill running white cotton jersey has one product. A mill running white, navy, grey and burgundy has four, each dyed, dried, matched to a reference shade and kept apart from the others for the rest of its life.
Anyone who has worked near a dyehouse will tell you about shade lots: two batches of the same nominal colour, dyed on the same recipe a week apart, will not match precisely. White has no such problem. White matches white.
Then there is fastness. A dye that survives washing, sweat, sunlight and rubbing costs more than one that does not, and underwear is the most hostile environment in a wardrobe. That is expense you can decline by leaving the fabric white, and in a category sold in volume at low margin the sums are not close Six Briefs That Built the Modern World.
There is a medical dimension the hygiene story swallows, and it is the one argument for white that has got stronger over time.
Textile dye allergy is well documented. The classes most often implicated are the disperse dyes used on synthetic fibres, with disperse blue 106 and 124 among the recognised culprits. Dermatology guidance is unambiguous about where the resulting contact dermatitis shows up: where fabric rubs and the wearer sweats. Waistband, upper thighs, buttocks. Exactly the footprint of a pair of briefs.
Which explains something you have probably noticed on your own garments. The gusset and crotch lining of coloured underwear are very often white or ecru when the outside is not Anatomy of a Brief: Every Panel, Seam and Stitch Explained. That is not a cost saving. That is the maker keeping undyed cotton against the most sensitive skin on the body, a quiet admission that the dye is a compromise everywhere else.
Institutions do not have taste, they have specifications, and specifications lock things in place for decades. Hospitals wanted linen that could be boiled, bleached and visibly verified. Armies wanted underwear issued in enormous quantities, laundered in field conditions and replaced from a single stock line. Schools, prisons and ships wanted the same. Once white is in the standing order it stays there long after anyone remembers why.
The exception shows how strong the default was. During the Second World War the American military moved service underwear to olive drab, and the advertising explained the reasoning with a bluntness that has not aged: a spot of white against coral sand or tropic green makes a bull's eye for the enemy. That is what it took to shift the specification. Not comfort, not fashion. Enemy marksmen.
Then the men came home, the olive drab went away, and white resumed as though nothing had happened.
By the 1950s, none of the technical objections to coloured underwear were still standing. Fast dyes existed, synthetic detergents were arriving, and domestic machines were spreading along with the possibility of washing at a temperature that did not destroy a colour. The barrier was no longer industrial.
Colour still took roughly another decade. The 1960s is when men's underwear moves from function to fashion in any serious way: bikini briefs cut low on the hip, novelty prints, wild colour, boxer shorts in patterns and eventually the seasonal prints people give each other in December.
Which tells you what was really holding colour back. Not the dyehouse. The customer. A garment nobody discussed, bought in packets and never showed anyone had no mechanism for expressing preference, because preference requires that somebody notice Why Men Are Frightened of Colour. White cotton yellows and greys for three reasons at once: body oils that oxidise in the fibre, mineral and detergent residue that builds up in hard water, and grey soil redeposited from the wash water when a load is overfilled and the machine cannot rinse properly. None of that is straightforwardly bleachable and all of it is cumulative.
For centuries the fix was optical rather than chemical. Bluing added a trace of blue pigment to the rinse, exploiting the fact that blue and yellow are complementary: put a little blue over a yellowed white and the eye reads the result as neutral. Early versions used smalt or stone blue, which was indigo ground with starch; later ones used synthetic ultramarine or ferric ferrocyanide, better known as Prussian blue. Reckitt's Crown Blue from Hull and Dolly Blue from the Lancashire Ultramarine Company were fixtures of British wash days, and bluing is still widely used in India and Pakistan.
Then came the clever version. In 1929 Krais observed that esculin, a coumarin derivative found in horse chestnut bark, could be applied to textiles to produce whites of unprecedented brilliance, because it fluoresced. That observation founded an industry. Modern optical brighteners, roughly eighty percent of which are stilbene derivatives, absorb invisible ultraviolet light at around 340 to 370 nanometres and re-emit it as visible blue at around 420 to 470. They remove nothing. They add light that was not previously visible, so the fabric returns more visible light than falls on it and reads as brighter than white.
That has two consequences, and between them they explain your drawer. Brighteners are deposited on the fibre by the detergent and wash off again, so a white garment moved from a brightening detergent to a gentle or eco one will go grey within a few washes without having got any dirtier. It has stopped being lit. They also degrade, since stilbenes fade under prolonged ultraviolet exposure, so a pair that lives on a sunny line loses its brightener faster than one dried indoors.
So the grey pair in your drawer is usually not worn out. It has oxidised sebum in the fibre and no brightener left on it. Having spent two thousand words explaining why white is the rational default, here is the part the industry has never wanted to say plainly.
Under pale trousers, white underwear is the worst available choice.
Light cloth, particularly a summer weight linen or a pale chino, is more transparent than it looks in a mirror indoors. What shows through is contrast, and against most skin tones a bright white panel is high contrast in a way that mid grey or taupe is not. Optical brighteners make it worse, because a brightened white does not merely reflect light, it emits it, which is precisely what you do not want from the layer under your trousers on a bright afternoon VPL, Static and Other Trouser Problems.
The right answer is boring and it works. Own white for the days it is invisible and correct, under a dark suit, under denim, under anything you would call workwear Briefs for the Office: The Tailoring Argument. Cotton is not white. Making it white was a chemical achievement of the industrial revolution that turned a weeks-long process into a barrel of powder, and it made plain white cloth cheap at exactly the moment modern underwear was being invented. White then survived because it could be boiled, because it could be proved clean, because it skipped a second manufacturing process, because it kept dye off the skin that minds dye most, and because every institution buying underwear in bulk wrote it into a specification and forgot about it.
None of those reasons is about how it looks. Every one is about what it costs, what it survives and what it can prove.
Which is an argument for keeping some. White lost its monopoly to black rather than to colour, which is a stranger outcome than it sounds and not obviously an improvement. The case against the black default is made in full elsewhere Against Black.
Because white was the cheapest and most practical option for most of the history of modern underwear. Cotton is naturally a creamy off-white and has to be bleached, and once chemical bleaching became industrial in the early nineteenth century, plain white cloth became very cheap. White could also be boiled without fading, showed dirt so a wash could be verified by eye, and skipped the separate cost of dyeing. Hospitals, hotels and armies then wrote it into their specifications and there it stayed.
Three things happen at once. Body oils oxidise inside the cotton fibre and yellow it, detergent and mineral residue builds up in hard water, and soil is redeposited from the wash water when the drum is overloaded and cannot rinse properly. On top of that, the optical brighteners that make new whites look brilliant wash off gradually and degrade in sunlight, so a pair can look grey simply because it has lost them rather than because it is dirty.
